I don't know about you guys, but I'm STOKED for the SUPERBOWL. Usually these parties will set me off track with all the unhealthy options that usually go hand in hand with football...NOT THIS SUNDAY! I've got not one, not two, but THREE stellar healthy dishes to keep you on track! GOOOOOO PATRIOTS!!!
Buffalo Chicken Lettuce Wraps
2.5 lbs chicken breast
1 cup buffalo sauce
Romaine or Iceberg lettuce, 2 heads
3 celery stalks sliced
Blue cheese crumbles (optional)
Blue cheese dressing (optional)
In a well sprayed crockpot, place chicken breast and buffalo sauce in. Cover and set on low for 6-8 hours, or high for 3-4 hours. Assemble and enjoy!
Zucchini Pizza Bites
3 zucchini diagonally sliced
4 tbsp marinara sauce
1 cup shredded mozzarella
salt (to dry moisture in zucchini)
Place diagonally sliced zucchini on cookie sheet. Sprinkle salt to prep the zucchini and draw out moisture (these can get soggy). Top with marinara sauce, sprinkle cheese, then place in an oven at 400 degrees F for 8-10 mins. And enjoy
Sweet Pepper Nachos
Small sweet peppers ( cut in half and deseeded)
16 oz fresh salsa
1-2 cups of fiesta blend shredded cheese
(can opt for sour cream or guacamole as well for garnish)
Cut peppers in half and scrape out seeds. Place them open on cookie sheet. Spoon in salsa and sprinkle on cheese. Place in oven on broil for 4 minutes. Just enough time for cheese to melt but peppers stay crisp. Can serve with guacamole and sour cream.
