Who doesn't like cabbage? It's March here in New England and that means a couple things. College basketball, everyone claiming a certain percentage of Irish heritage, and cabbage in all the grocery stores.
Cabbage doesn't get the credit it deserves. It's full of fiber, Vitamin C, phosphorus (good for transporting nutrience into your cells) and a great source of other numerous vitamins and minerals.
So, in honor of all of these things, and the fact that it was on sale :), I decided to make a really quick and easy unstuffed cabbage roll. Hope you guys enjoy!
1 small head of cabbage
1 medium onion chopped
2 cloves garlic minced
1 14oz jar of tomato sauce
2 lbs ground turkey
Salt and pepper to taste
2 tbsp avocado oil
Over medium heat on stove, place 2 tbsp oil in pan and add chopped onion. Let saute for 2 minutes. Then add turkey, stir and flatten to brown faster. Once turkey has browned add garlic and salute for another minute. Add chopped cabbage until pan is filled. Add 1/4 cup of tomato sauce to the pan and cover to let simmer. As cabbage starts to soften and shrink add little by little more with tomato sauce until all cabbage is used.
