French Toast Protein Muffins

Hey guys!

Here’s a little high protein HUMPDAY treat to spice up your morning routine! These are a great and delicious way to get a little more protein in your morning and breaks up the (MY) same old egg routine. These little treats are incredibly macro friendly. INGREDIENTS:

  • 32oz liquid egg whites (or 20-24 egg whites)

  • 1/2 cup unsweetened cashew milk (or milk of your choice)

  • 2 tsp vanilla extract

  • 2 tsp cinnamon

  • 3/4 cup monk fruit sweetener (or natural sweetener of your choice)

  • 8 slices sprouted grain bread cut into small cubes

Directions:

  1. Preheat oven to 350 degrees fahrenheit.

  2. Mix all other ingredient together in mixing bowl.  Whisk for 1 minute.

  3. Line 24 muffin cups with parchment paper cups or spray with non-stick baking spray (or both)

  4. Evenly distribute the cubed bread in the muffin cups

  5. Mix all other ingredient together in mixing bowl.  Whisk for 1 minute.

  6. Ladle egg white mixture evenly over sprouted bread in each muffin cup.

  7. Let sit for about 5 minutes for bread to be able to saturate.

  8. Bake for 25-30 minutes until egg mixture has cooked.

Recipe makes 24.
