Shredded Chicken Meal Prep

Here’s a 3 for 1 deal. Great and EASY way to get your meal prep done FAST without sacrificing flavor or variety. The chicken stir fry is an easy go-to. Delicious flavors and SO QUICK to put together. My chicken salad is PROTEIN PACKED substituting the traditional mayo for greek yogurt and can be put in a wrap, in lettuce wraps, over a salad or even just by itself. It’s the perfect thing to bring to a cook out as well! And finally, my buffalo chicken celery snacks. These are a great way to get in a high protein snack and satisfy that CRUNCH factor.

When I’m crunched for time, this is my go-to meal prep. I get all my lunches and snacks prepped in less than 30 mins…So, LET’S GET STARTED.

First things first…cook the chicken. You’ll need 2lbs chicken tenderloins.

Cook in a crockpot on high for 3-4 hours, low for 6-8 or in an instant pot for 15 mins. Let cool and shred

STIR FRY CHICKEN AND VEGGIES

  • 1/3 portions shredded chicken

  • Package of frozen stir fry veggies

  • 100 ml coconut aminos

Mix and serve with white rice, cauliflower rice or just by itself.

CHICKEN SALAD LETTUCE BOATS

  • 1/3 portion shredded chicken

  • 1 cup greek yogurt

  • 50g dried cranberries

  • 3 tbsp dijon mustard

Mix and serve in lettuce wraps or good just by itself.

BUFFALO CHICKEN CELERY STICKS

  • 1/3 portion shredded chicken

  • 3 tbsp greek yogurt

  • 1/4 cup hot sauce

  • celery sticks

Mix and fill celery sticks. I garnished with chopped chives but this is optional.
